Fulfilling Fall Food

No better way to welcome fall than with a warm satisfying meal that cooks unattended.  My family loves this comforting dish and love any one pot meal

Ingredients

  • 2 pounds Beef Sirloin Roast
  • 5-6 redskin potatoes
  • 4 carrots peeled and cut into thirds
  • 1 large onion quartered and pulled apart
  • 1 cup beef broth
  • 1 can diced tomatoes (15 ounces)
  • 2 bay leaves
  • 5 sprigs thyme
  • salt and pepper

Directions

  • Trim all visible fat from roast and season with salt and pepper

  • Place roast in crockpot and surround with veggies

  • In a medium bowl combine tomatoes and broth. Add to crockpot

  • Cover and cook on high for 3 4 hours or low 6-8 hours

  • When done cooking serve meat with veggies.  Spoon the broth tomatoes over meat.
