Slow Cooker Pot Roast

Fulfilling Fall Food
No better way to welcome fall than with a warm satisfying meal that cooks unattended. My family loves this comforting dish and love any one pot meal
Ingredients
- 2 pounds Beef Sirloin Roast
- 5-6 redskin potatoes
- 4 carrots peeled and cut into thirds
- 1 large onion quartered and pulled apart
- 1 cup beef broth
- 1 can diced tomatoes (15 ounces)
- 2 bay leaves
- 5 sprigs thyme
- salt and pepper
Directions
Trim all visible fat from roast and season with salt and pepper
Place roast in crockpot and surround with veggies
In a medium bowl combine tomatoes and broth. Add to crockpot
Cover and cook on high for 3 4 hours or low 6-8 hours
When done cooking serve meat with veggies. Spoon the broth tomatoes over meat.
