Quinoa Fried "Rice"


like chinese takeout but not
Add a protein like grilled chicken or shrimp and this is a perfect one dish meal.
Ingredients
- 1 cup dried quinoa
- 2 cups sliced shiitake mushrooms
- 1 cup sliced vidalia onion
- 3 oz baby spinach
- 2 eggs beatened
- 3 tablespoon teriyaki sauce (I use the 365 degree brand from Whole Foods)
- 2 teaspoons low sodium soy sauce
- Cooking spray
- Sriracha Sauce (optional)
Directions
Cook the quinoa to package directions
Heat a non-stick skillet over medium-high heat. Spray with cooking spray.
Add mushrooms and onions and cook until onions are translucent and the mushrooms have softened, about 3-4 minutes.
Add soy sauce and stir.
Pour eggs into pan and stir continually until they are fully cooked.
Add spinach.
Once spinach is cooked, fold in quinoa and add teriyaki sauce. Season with pepper to taste.
Drizzle srirachi sauce on each serving.
