No Noodle Veggie Lasagna

the hearty goodness of lasagna with no carb coma

An Italian favorite that doesn't use one noodle.  It's a kid and adult pleaser.

Ingredients

  • 1 lbs extra lean ground turkey
  • 1 eggplant
  • 1 zucchini
  • 1 spaghetti squash
  • 1 yellow squash
  • 1 med yellow onion
  • 1 package mushrooms
  • 1 sm bag frozen or fresh broccoli
  • 1 bag spinach
  • 1 container lite ricotta cheese (Remove during Week 1 of Check Yourself)
  • 1 jar your favorite sauce. I used Mids basil flavor

Directions

  • In a sauce pan, brown your turkey, sprinkle with salt and pepper

  • Place your spaghetti squash in the microwave and cook per the directions of the size of squash you purchased

  • Once meat is brown, add mushrooms, onions and broccoli and cook down for a couple minutes and then add your jar of sauce

  • In a casserole dish spray bottom and sides w any non-stick spray

  • Slice the eggplant long ways so that you have about six slices of the eggplant

  • Line the bottom of the casserole dish with the eggplant

  • Once spaghetti squash is done, cut in half and scrap out the seeds and discard

  • Shred the rest is the spaghetti squash and add a layer on top of the eggplant

  • Add a layer of ricotta

  • Place a layer of spinach

  • Spread a layer of sauce

  • Peel the zucchini and yellow squash long ways with a potato peeler

  • Begin adding a layer over the sauce changing the direction of the strips after each layer is finished

  • Top with sauce and mozzarella and place in the over on 350 degrees for about 1 hour

  • Garnish with basil and enjoy
