Fiesta time

This dish just looks happy.  All the beautiful colors of fresh veggies combined into something that smells and tastes amazing.  It is a fiesta for your plate.

Ingredients

  • ​4 ears of corn
  • 1 red bell pepper cut in 1 inch pieces
  • ½ red onion diced
  • 1 poblano pepper cut in 1 inch pieces
  • 2 cloves garlic minced
  • 2 pieces center cut bacon cut into small strips
  • ¼ cup cilantro
  • Lime

Directions

  • Cut off the kernels from the cobs   

  • Heat a skillet over medium high heat

  • Add the bacon and let cook until fat is rendered

  • Remove bacon and add onion and garlic

  • Cook for about a minute and add the peppers

  • Cook for about five minutes

  •  The onion with start to turn translucent

  • Add the corn and cook until the it starts to brown about 4 minutes

  • Put bacon back in the mixture and stir in the cilantro

  •  Season veggies with salt and pepper

  • Serve with your protein of choice and a wedge of lime
