Mexican Corn

Fiesta time
This dish just looks happy. All the beautiful colors of fresh veggies combined into something that smells and tastes amazing. It is a fiesta for your plate.
Ingredients
- 4 ears of corn
- 1 red bell pepper cut in 1 inch pieces
- ½ red onion diced
- 1 poblano pepper cut in 1 inch pieces
- 2 cloves garlic minced
- 2 pieces center cut bacon cut into small strips
- ¼ cup cilantro
- Lime
Directions
Cut off the kernels from the cobs
Heat a skillet over medium high heat
Add the bacon and let cook until fat is rendered
Remove bacon and add onion and garlic
Cook for about a minute and add the peppers
Cook for about five minutes
The onion with start to turn translucent
Add the corn and cook until the it starts to brown about 4 minutes
Put bacon back in the mixture and stir in the cilantro
Season veggies with salt and pepper
Serve with your protein of choice and a wedge of lime
