Lemon Dijon Chicken in Foil Packets

Making Chicken Great Again
This is a super simple dinner that has minimal clean up. If you would like to add to the look of the dish, thinly slice lemons and place on top of chicken. When the cooking is complete open the foil packs and broil the lemon and chicken to give a beautiful brown on the lemon.
Ingredients
- 2 Tablespoon Extra Virgin Olive
- 2 Tablespoon Dijon Mustard
- Zest of one lemon
- 1/4 cup lemon juice
- 1/2 teaspoon salt
- 2 sprigs thyme leaves removed
- Few turns of pepper mill
- 4 medium carrots peeled and cut into 1/2 inch pieces
- 1 small onion cut into sixths
- 8 ounces baby potatoes cut in half
- 4 boneless skinless chicken breast (6-8 ounces)
Directions
Preheat oven to 400 degrees
In a small bowl whisk together oil, dijon, lemon zest, lemon juice, salt, thyme and pepper
In medium bowl combine veggies and half of the mustard sauce, stir well to coat all veggies
Place four pieces of about 12 inches of foil on counter and evenly divide the veggies
Place chicken breast on top of each bundle and cover with the remaining mustard. (Make sure both sides of chicken are covered)
Sprinkle chicken with a pinch of salt and pepper
Close the foil around each bundle, making four individual foil pouches.
Place on baking sheet and cook in oven for about 35 minutes or until chicken is fully cooked and potatoes are tender.
