Beer Can Chicken

My family and the neighbors that I seem to feed regularly get a little bored with the typical grilled chicken breast. So I am always looking for easy ways to change things up. I made this whole grilled chicken twice this summer and it is a real crowd pleaser. I used the "Beer Can Chicken" cooking method which I am certain is taught at all reputable culinary schools. Basically, this is where a can of beer becomes the stand to hold the chicken upright. The seasoning is Adobo, which can be found in the hispanic section of the grocery store. It is a very basic blend of salt, garlic, pepper and cumin.
Ingredients
- Can of Beer Whole Chicken 4- 5 lbs
- 1 Lemon juiced
- 2 tablespoons Adobo Seasoning
- Can of Beer
- Whole Chicken 4- 5 lbs
- Salt
Directions
Rinse chicken, pat dry with paper towels and sprinkle salt in cavity. Loosen the skin around the breasts.
In a small bowl, whisk together lemon juice and olive oil. Brush the chicken with oil on the outside and under the skin.
Open beer, pour about 2/3 of beer into a glass, (drink the beer in the glass), then about a 1/3 way down the sides of the can pierce sides of can with sharp knife.
Place chicken on can so the can is about 2/3 in the cavity. The can will act as a stand for the chicken.
Put chicken on a low to medium low grill. Cook for 1 hour to 1 hour and 20 minutes or until chicken is done.
Remove from grill and let rest for 15 minutes before carving.
